4 cod filets
1 jar of Ursini Frantoiana
3 small zucchines
Cut both extremities of the zucchini, cut them vertically in half and peel them vertically using a regular peeler.
Steam them for 10 minutes (if you haven’t got a steamer you can cook them in a non stick pan with a drop of olive oil and a little bit of water with the lid on at low heat.
Add a little oil to a non-stick pan and place the cod in the pan skin side down. When there is some colour on the skin turn the heat down to low and leave for 5 minutes. Turn the fish over and cook on the other side for a further 4-5 minutes until cooked through.
Add the jar of Frantoiana, allow to warm up.
